VEGETABLES FROM MEXICO

AGUACATE/AVOCADO
You may not know that the avocado is actually full of fat. However, this fat is really healthy and will help you with a diet. A ripe avocado is dark brown/purple and soft when you press it. It can be eaten when cut in half, remove the seed and scoop the flesh out. There is not much flavour to it, and therefore often used as a product in dishes.
CHAYOTE
The Chayote is usually cooked lightly to retain the crisp flavour. It also can be eaten raw in salads and salsas. It is a great source of vitamin C. What most people do not know, is that the root, stem, seeds and leaves are eatable as well.
TOMATOES
Tomatoes are one of the native Mexican plants and have become an essential ingredient in the cuisine of many other countries. Mexico is the 10th largest country regarding to tomato production. Tomatoes come in many forms, inluding; cherry tomatoes, roma tomatoes, greenhouse tomatoes and vine ripe large rounds.
JICAMA
The exterior of the Jicama is yellow and papery, while the inside is creamy and white, with a crisp texture. The flavour is sweet and starchy. It is usually eaten raw, sometimes with a little salt, lemon or chili powder. It is also often used in soups or salads. Beware to not eat the seeds. Moreover, it is full in fibers and low in calories.
BEANS
In Mexico, there are at least 18 different types of beans. Cook the beans before eaten them. They also can be bought in cans, as they are widely available. Beans are a source of Niacin, Thiamine, Riboflavin, B6 vitamins and many more.
CHILES
The chile is the ingredient that makes the dishes spicy. There are many different kinds, including; serrano, jalapeño, poblano, habanero, chile de arbol, chilotle, chile negro and ancho. Make sure before throwing a whole chile in your dish, to keep in mind what your preferences are regarding spiciness. 
SWEET POTATOES
Unlike the regular potato, this kind is very sweet and very tasty. The potato has to be cooked before eaten, and it can be served with vegetables. Also, a different dish can be made of them, like a mashed potato stamp. They make sure of a great energy and are full with vitamin A and beta-carotene.
NOPALES
It is strange, but people eat cactus. Not the ones with the needles on it. The Nopales can be eaten raw or cooked. The product is very healthy since it contains dietary mineral, manganese, vitamin C, magnesium and calcium. 
TOMATILLOS
This is another typical Mexican vegetable. It is green when ripe and they are a key element in many sauces. It has a slightly tart flavour and has high pectin content. The inside of the tomato is white and more meaty than a regular tomato. Make sure if there still is husk around it, to remove it.
CORN
Corn is one of the native vegetables to Mexico and they use it in almost every dish. It adds a little sweetness to the spiciness. It has to be cooked before consuming. Moreover, popcorn or crackers can be made with corn.
